This cake is egg free, dairy free, sugar and gluten free and yet it is delicious!

Vegan Chocolate Mud CakeTotal time: 40 mins
  • 2 ripe bananas
  • 1/2 cup almond meal
  • 2 tbsp. coconut oil
  • 70 g. dark chocolate
  • 1/2 tsp. vanilla extract
  • 2 tsp. baking powder
  • 1 tbsp. coconut oil
  • 30 g dark chocolate
  • walnuts (optional)
  1. Heat your oven to 180 degrees Celsius (350 degrees Fahrenheit)
  2. Melt the two tablespoons of coconut oil in a small saucepan then take it off the heat.
  3. Break up the seventy grams of chocolate and melt it in the warm coconut oil.
  4. Mash the bananas with the vanilla extract and pour the melted chocolate and coconut oil over them.
  5. Beat them together with the almond meal and baking powder.
  6. Grease a very small cake tin (I use the small saucepan I melted the oil and chocolate in) and line the bottom of it with baking paper.
  7. Pour the mixture into the tin then bake for half and hour or the cake is pulling away from the edges of the tin.
  8. Turn the cake out onto a rack to cool.
  9. Melt the one tablespoon coconut oil then add the remaining chocolate to it.
  10. Mix them together then leave them to cool until almost set.
  11. When the cake has cooled spread the topping over it and top it with walnuts if desired.
