This is an easy dessert or decadent breakfast for one.

Sugar-free Banana HotcakesTotal time: 10 mins
  • 1 small ripe banana
  • 1 tbsp. butter
  • 1 tbsp. self raising flour
  • 1/2 tsp. cinnamon powder plus a little extra for dusting
  • 1 tbsp. honey
  • 6 walnut halves
  • Greek yoghurt to serve
  1. Take a small skillet and place it on a medium heat.
  2. Chop the walnuts roughly.
  3. When the butter has melted pour it off into a bowl and set the skillet aside.
  4. Mash the banana into the butter then mix in the flour and cinnamon to form a batter.
  5. Return the skillet to the heat.
  6. Divide the batter into three hot cakes and place them in the skillet.
  7. Cook the hotcakes for one minute until they are golden then turn them over.
  8. Cook for another thirty seconds then place them on your serving plate.
  9. Pour the honey into the pan with the walnuts and give them a very quick stir, just to heat them through.
  10. Pour the honey and walnuts over the hot cakes and serve with a little Greek yoghurt and a dusting of cinnamon.
