I love to use kangaroo steak in this recipe.If you don’t fancy ‘roo or it’s unavailable beef is a good alternative.

Steak and Noodle SaladTotal time: 15 mins
  • 150g (5oz) Steak
  • 1/2 an avocado
  • 5 asparagus spears
  • 1 cup rocket (arugula) leaves
  • 100g (3oz) vacuum packed noodles.
  • 1 tbsp. olive oil
  • 1 tbsp. red wine vinegar
  • Salt and pepper
  1. Rub some of the oil on the steak and season it with salt and pepper.
  2. Place the steak in a pan or on the barbeque and cook until droplets of red juice appear on the surface of the steak then turn and repeat the process.
  3. Take the meat off the heat and cover it with foil or a saucepan lid and let it rest while you prepare the salad.
  4. Soak the noodles in warm water and squeeze them so that they separate.
  5. Snap the ends off the asparagus and steam the spears for five minutes. Alternatively, cook it in the microwave by rinsing it and placing it in a covered bowl then cooking on high for one minute.
  6. Slice the avocado and cut the asparagus into bite size lengths then combine them with the rocket.
  7. Mix the vinegar and oil with the salt and pepper to form a dressing.
  8. Drain the noodles and place them in a bowl topped with the vegetables.
  9. Carve the steak into thick slices and place it on top.
  10. Pour the dressing over the salad and serve.
