I love a quick vegetarian soup. Depending on your appetite this makes one or two hearty meals.

Spicy Lentil Soup with Yoghurt ToppingTotal time: 15 mins
  • 1 can of green lentils
  • 1 long green chili
  • 1 tsp. turmeric powder
  • 1 tsp. grated ginger
  • 1 small clove of garlic, grated
  • 1 tsp. cumin powder
  • 1 tsp. of coriander powder
  • 1 cup of water
  • 1 cup of coconut milk
  • ½ tbsp. cooking oil
  • 2 tbsp. Greek yoghurt
  • 10 mint leaves
  • Pinch of salt
  1. Chop the mint roughly and mix it with the yoghurt and salt.
  2. Rinse the lentils until the water runs clear and free of bubbles. This will eliminate unpleasant after effects. You know what I mean.
  3. Cut the chili into thin slices.
  4. Heat the oil in a fry pan until it ripples then, add the spices, chili, garlic, and ginger.
  5. Fry them gently for one minute then pour in the coconut milk, water and lentils.
  6. Bring the soup to the boil then reduce the heat and simmer for ten minutes before serving with the yoghurt sauce.
