Making your own pizza base for one is quick and easy with this recipe. I also love to add spices and seeds to the dough then pan frying it to make flat bread.

Mushroom Pizza for OneTotal time: 15 mins
  • 2 tbsp. self raising flour
  • 1 tbsp. plain yoghurt
  • A pinch of salt
  • 1 tbsp. Italian tomato sauce
  • ½ cup grated tasty cheddar cheese
  • 3 button mushrooms
  • 1 tbsp. cooking oil
  • 1 tbsp. finely chopped parsley
  • 1 clove garlic
  • Salt and pepper
  1. Mix the yoghurt with the flour and the pinch of salt to form a soft dough.
  2. Knead it for thirty seconds then let it stand for five minutes.
  3. Sprinkle extra flour onto a clean work surface and roll the dough into a circle about 20 cm (9 Inches) in diameter.
  4. Grate the garlic finely into a bowl with the oil, parsley salt and pepper.
  5. Slice the mushrooms and toss them through the oil mixture.
  6. Pour a teaspoon of cooking oil in a fry pan and heat it over a medium heat until it begins to ripple.
  7. Place the pizza base in the pan and fry for one to two minutes until the base has browned.
  8. Turn the pizza base and while the second side cooks spread the tomato sauce then the cheese over the top.
  9. Arrange the mushrooms on the pizza then place the pan under a hot griller (broiler) until the cheese melts then serve.

I have spent countless hours trying to reduce serves 4 to 6 to serves 1, I will try the recipes you have on your site, they look delicious. I will get my library to order them if they don’t already have them because I would like to see if the recipes are suitable for me, I have a few diet issues.
