This dish is light and fresh yet satisfying and you don’t have to chop a thing.

Mushroom and Basil PastaTotal time: 20 mins
  • 70-100g dried pasta
  • 10 small button mushrooms
  • Half a cup of basil leaves
  • 1 small clove of garlic
  • 1 tbsp. butter
  • ½ tbsp. cooking oil
  • ½ tsp. salt
  • ½ tbsp. olive oil
  • Cracked black pepper and grated Parmesan cheese to taste
  1. Cook the pasta in plenty of boiling salted water as instructed on the pack.
  2. Wash the mushrooms in cold water then drain them well.
  3. Drain the pasta, retaining a quarter of a cup of the water, and place the pasta in your serving bowl.
  4. Return the pot to the heat and pour in the cooking oil and butter.
  5. When the butter foams add the mushroom and fry them until golden.
  6. Pour in the saved pasta water and cover the pot with a well-fitting lid.
  7. Steam the mushrooms for two minutes then grate in the garlic and stir the basil leaves and olive oil.
  8. Toss the pasta through the mixture and serve with black pepper and Parmesan cheese.
