This simple chicken dish is delicious, nutritious and only uses one pan.

Moroccan ChickenTotal time: 20-30 mins
  • 1 chicken thigh fillet
  • 1 tsp. sweet paprika
  • 1 tsp. cumin powder
  • ½ tsp. salt
  • 1 tsp. finely grated lemon rind
  • 1 tbsp. cooking oil
  • 1 large handful of baby spinach leaves
  • ¼ cup couscous
  • ¼ cup water
  1. Mix the spices, salt and lemon rind with the oil.
  2. Trim the chicken of excess fat then slice it into three strips and stab them all over with a fork. This will allow the marinade to flavor the chicken all the way through.
  3. Coat the chicken with the oil mixture and marinade for ten to twenty minutes . (Have a glass of wine while waiting.)
  4. Heat a fry pan over a medium heat then add the chicken and fry gently for three minutes on each side.
  5. Remove chicken from the pan and cover it with foil or a saucepan lid.
  6. Pour the water into the pan to deglaze it.
  7. When the water boils, add the couscous and remove the pan from the heat.
  8. Lay the spinach over the couscous and cover the pan with a well-fitting lid.
  9. Leave for three minutes then fluff the couscous with a fork stirring the spinach through it.
  10. Place the couscous in a serving bowl topped with the chicken and eat it.
