Sweet, succulent and simple, this recipe is perfect with chicken or duck. Just double the amount of chicken for a great sandwich the next day.

Lime ChickenPrep time: 5 minsTotal time: 25 mins
  • 1 chicken thigh or Maryland fillet preferably with the skin on
  • ¼ cup couscous
  • ¼ cup water
  • 1 tbsp. cooking oil
  • 1 tsp. brown sugar
  • Juice and rind of ½ a lime
  • 1 tsp. fish sauce
  • 1 tsp. soy sauce
  1. Grate the lime rind finely and mix it with the oil, lime juice, soy and fish sauce.
  2. Trim the chicken of excess fat and cut it into three slices then stab them all over with a fork.
  3. Coat the chicken with the lime mixture and marinate for at least ten minutes but not longer than half an hour.
  4. Heat a small fry pan over a medium heat then add the chicken skin side down and fry for three minutes.
  5. Turn the chicken and fry it for a further three minutes. The marinade will dry and start to caramelize in the pan.
  6. Remove the chicken from the pan and cover it to keep it warm or you can place it under a hot griller (broiler) to crisp the skin a little more.
  7. Return the pan to the heat, pour in the water and bring it to the boil.
  8. Turn off the heat and stir in the couscous, incorporating the pan juices, then cover the pan with a well-fitting lid and let it stand for three minutes.
  9. Fluff the couscous with a fork then place it into your serving bowl.
  10. Slice the chicken and place it over the top of the couscous.
  11. Serve with a green salad or steamed vegetables.
