This dish is delicious served hot or cold as a salad.

Fresh Tomato and Basil PastaTotal time: 20 mins
  • 1/2-3/4 cup dried pasta
  • 1 ripe tomato
  • 1/2 clove garlic
  • 1/2 tsp. chili paste
  • 1 cup basil leaves
  • 1/2 cup ricotta cheese
  • 1 tbsp. cooking oil
  • 1/2 tsp. salt
  1. Bring a medium size pot of water to the boil and add a pinch of salt.
  2. Place the pasta in the boiling water and cook as instructed on the pack.
  3. Drain the pasta and place it in your serving bowl covered with the saucepan lid.
  4. Chop the tomato into 8 wedges
  5. Return the pot to the heat and add the oil.
  6. When the oil begins to ripple, reduce the heat, add the tomato and sauté for one minute.
  7. grate the garlic into the pan and add the chili paste, basil and salt and cook for another thirty seconds.
  8. Add the pasta to the pan and toss it through the sauce.
  9. Break chunks of the ricotta into the mixture and serve.
