  • 2 Arnotts’ Marie biscuits or sweet digestive biscuits (cookies)
  • 1 tbsp. cream cheese
  • 1 tbsp. Greek yoghurt
  • 1/2 tsp. lemon rind
  • 1 tsp. Lemon juice
  • 8-10 frozen blackberries
  1. Whisk the cream cheese, yoghurt and lemon rind together.
  2. Place one of the biscuits in a small soufflé dish and pour one teaspoon of the lemon juice over it.
  3. Spoon one third of the cream cheese mixture over the top and place the second biscuit on top of that.
  4. Pour the remaining lemon juice onto the biscuit then spoon the rest of the yoghurt mixture over the top and smooth out the surface.
  5. Place the blackberries around the top of the dessert and refrigerate it for at least half an hour before serving.
Yield1 serve
