Artichoke and Mozzarella Pizza
  • 2 Tablespoons Self raising flour
  • 1 Tablespoon Plain yoghurt
  • 1 Pinch Salt
  • 1 Tomato
  • 2 Arichike hearts
  • 1 Tablespoon Italian tomato sauce
  • 50-75 (2 -3) grams (ounces) Fresh buffalo mozzarella
  • Salt and pepper to taste
  1. To make the dough, mix the flour, yoghurt and salt together.
  2. Knead for thirty seconds then stand for five minutes.
  3. Sprinkle extra flour onto a clean work surface and roll the dough into a circle about 20cm (9 Inches) in diameter.
  4. Place a teaspoon of cooking oil in a fry pan and heat over a medium heat until it begins to ripple.
  5. Place the pizza base in the pan and fry for two minutes.
  6. Slice the mozzarella and tomato into rounds.
  7. Turn the pizza base and layer the cheese on the base followed by the tomato.
  8. Season the tomato then slice the artichokes and arrange evenly over the top of the pizza.
  9. Place the pan under a hot grill (broiler) until the cheese melts then serve.
